Greek Burgers with Yogurt Sauce and Quinoa Tabbouleh Salad

We recommend doubling the quinoa tabbouleh salad recipe for extras to use in lunches throughout the week! For one extra starch serving in your meal, serve burger on a toasted sandwich thin.
  • 1 lb lean ground beef with 10% fat or less
  • 2 oz crumbled feta cheese
  • 1 cup frozen spinach, thawed and drained of excess water
  • 1/4 cup chopped red onion
  • 2 cloves garlic, minced
  • ¼ cup finely chopped Italian parsley
  • 2 tsp dried oregano
  • 1/2 tsp freshly ground pepper
  • ½ cup plain fat free Greek yogurt
  • 1 Tbsp lemon juice
  • 1 Tbsp chopped fresh dill (or 1 tsp dried)
  • ½ English (seedless) cucumber, peeled and finely diced
  • 1/2 tsp salt
  • Freshly ground pepper, to taste
  • ½ cup uncooked quinoa
  • 1/4 cup chopped red onion
  • 1 cup cherry tomatoes, quartered
  • ½ English (seedless) cucumber, peeled and chopped to 1/4 –in pieces
  • Juice and zest of one lemon
  • 1 Tbsp olive oil
  • ¼ cup chopped Italian parsley
  • ¼ cup chopped fresh mint
  • Freshly ground pepper, to taste
  1. Heat grill to medium high heat.
  2. Combine all burger ingredients in a large bowl and mix well with your hands. Form into 4 patties. Grill burgers to desired doneness, about 8-10 minutes for medium.
  3. To make tzatziki, combine all ingredients in a small bowl and mix well. Refrigerate until ready to use.
  4. For tabbouleh, combine quinoa, 1 cup water and 1 tsp salt in medium sauce pan. Bring to a boil, reduce heat to low and simmer, covered, for 15 minutes.
  5. Remove from heat, let sit 5 minutes covered and fluff with a fork. Allow quinoa to cool slightly and add remaining ingredients, through chopped mint. Season to taste with pepper. Serve at room temperature, or cold. Do not reheat.
  6. Serve burgers topped with 2 Tbsp yogurt sauce.
