Savory Sage and Parmesan Pork Chops

(Adapted from Cooking Light Magazine) These have so much flavor, they can be paired with a simple steamed veggie and small baked sweet potato for a complete meal.
Serves: 4 servings
  • ¼ cup Italian breadcrumbs
  • ¼ cup grated parmesan cheese
  • 1 Tbsp chopped fresh sage
  • ¼ tsp freshly ground pepper
  • ¼ cup flour
  • 1 egg
  • 1 Tbsp Dijon mustard
  • 4 4-oz boneless thin pork chops
  • 1 Tbsp olive or canola oil
  1. Combine breadcrumbs, cheese, chopped sage, and ground pepper in a shallow bowl.
  2. Place flour in a separate shallow bowl.
  3. Whisk egg and mustard together in a third shallow bowl.
  4. Heat oil in large nonstick skillet over medium-high heat.
  5. Working with one chop at a time, dredge in the flour, then the egg, then the breadcrumb mixtures and place in hot oil.
  6. Cook 4 minutes on each side, or until browned and pork is cooked through.
