Watermelon and Feta Salad

This would be a delicious side to serve with BBQ Chicken and Corn on the Cob
  • 5 cups watermelon, cut into 1-in cubes
  • 1/2 cup chopped fresh basil
  • 4 cups chopped romaine lettuce
  • 4 oz reduced fat crumbled feta cheese
  • 1 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • pepper, to taste
  1. Place watermelon cubes through chopped olives in a large salad bowl. whisk together olive oil, lime juice and pepper. Drizzle dressing over salad and very gently toss to coat.
